Cranberry Orange Pecan Scones
category: Breakfast

Great for breakfast or afternoon tea. These scones are flakey and so easy to make. I adopted this version of a traditional scone when my son was studying the United Kingdom in school this past year. His classmates and all the mothers just went crazy over them!
The Ola! Cranberry Orange Pecan Granola has maple syrup as the sweetner and the combination is just amazing.

You will need to chill the dough for at least 2 hours or overnight so I plan ahead

What you will need:
- 2 3/4 cups all- purpose flour
- 1/2 cup corn meal (white)
- 1/2 cup granulated sugar + some for topping
- 1 tablespoon baking powder
- 1/8 teaspoon kosher salt
- 1 1/2 to 2 sticks + sweet butter depends if you want really, really flaky scones use all 2 sticks of butter
- 2-2 1/2 cups Ola! Cranberry Orange Pecan Granola (one 9 ounce bag)
- 3/4 cup heavy cream + extra for topping
- pinch of cinnamon

Combine flour, corn meal, sugar, baking powder & salt then cut in cold butter. This mixture will be course now add the Ola! Cranberry Orange Pecan Granola & heavy cream. Mix till all is combined.

Next: shape the dough into three equal disks about one inch in height on parchment paper. Brush the top with heavy cream & melted butter then sprinkle with cinnamon sugar mixture.

Refridgerate for at least two hours or overnight.

Then: cut each disk into four or eight triangles, separate the triangles on the parchment paper so they cook evenly. You can use a cookie cutter that is round if you want a uniform shape - but why bother

Preheat the oven to 400F. Bake 15- 18 minutes. Remove from the baking sheet.

Serve warm or cool with jam, more butter or enjoy them alone with a cup of tea.

Hint: I double the batch and freeze the disks right on parchement paper in a freezer bag. I take the dough out the night before and de-frost in the frig because mornings are just crazy.

Try it hot!
category: Breakfast

Ola! is fabulous as a hot cereal. Start with the 1/3 cup serving size of Ola! (you can always add more later) in a microwavable bowl or small saucepan. Add 1/2 cup milk or water and heat until hot. You can let it sit for a few moments until it's just the right texture, then add toppings of your choice: half-and-half, cream, milk or soy milk, flax, bran cereal, nuts, dried fruits (also good added before heating), coconut, fresh berries, and on and on...Enjoy while looking out the window. Sticks to your ribs all morning!

Chocolate
category: Dessert

Here's a delicious and fun way to Ola! Wash and dry any fruits you choose for dipping (strawberries are perfect for this dessert, but I think bananas would work well too). Melt either dark or milk chocolate in double boiler, stirring occasionally. Meanwhile, dish Vanilla Almond Ola! into serving bowls (or can use just one bowl for the table). When chocolate is melted and fruit and Ola! have been prepared, serve ... and watch it all disappear!

parfait cups
category: Breakfast

this is one of those ideas that looks great when served but is so easy to make. your kids will also love to help with these too.
i used stemless wine glasses for mine but a large trifle dish would also work great for a brunch gathering.

what you will need:
your favorite Ola! flavor
your favorite yogurt
fresh fruit (berries, bananas, etc.)
pumpkin bread* (can also use banana, apple or zucchini breads)
*note: can omit if you just want to do the yogurt, Ola!, fruit layers.

how to begin:
start out with a layer of small cubes of the bread and spread on the bottom of glass.
spoon on a layer of yogurt
spread a layer of Ola!
add a layer of the fruit

this can now be repeated for another layer or two, depending on the size of your vessel.
i like to have the Ola! showing on the top so don't cover it all with the last layer of fruit.

Chocolate Ola! Bark
category: Dessert

A great holiday treat, Ola!Bark makes a great gift for family and friends, and is easy to do.

A 12oz bag of chocolate makes a 9 x 13" pan. I suggest using cranberry orange pecan with white chocolate and vanilla almond with darker chocolates.

1. Melt chocolate in a heatproof bowl set over a saucepan of simmering water stirring occasionally.
2. Once melted, spread the chocolate on a parchment lined baking sheet and sprinkle generously with Ola! Let set until firm. Tip: you may need to press some of the oats and nuts into the chocolate.
3. Once firm, break into large pieces and enjoy! Keep in a sealed container if not using right away.

vanilla almond apple crisp
category: Dessert

peel and slice about 10 apples. i like granny smiths.
squeeze some lemon juice on slices to prevent browning. mix apples with about 1 tsp of cinnamon and freshly grated nutmeg.
saute apples in a pan with a pat of butter until soft, but not mushy. drizzle some maple syrup over apples to slightly sweeten and cover to retain moisture.

topping
melt 2 tbls of butter and mix into 1 1/4 cups of Ola! Vanilla Almond

put apples into a buttered baking dish (about 9")
spoon Ola! on top of apples, dot with butter and bake for about 15 min at 350.

serve warm with a dollop of fresh whipped cream (i usually add vanilla and cinnamon to mine) or vanilla ice cream and sprinkle a little more Ola! on top. Yum!

these are quick and great for a brunch or quick breakfast treat!
use your favorite pumpkin bread mix.
cranberry orange pecan Ola! can be used at this point to top muffins before baking if you don't want to use the frosting.
if using the frosting, bake muffins according to directions.
to make frosting, mix a container of cream cheese and 1/4 cup confectioners sugar with a hand mixer. add in zest of one orange. spread frosting on cooled muffins and top with cranberry orange pecan Ola! (Tip: a scoop of Ola! can also be added to batter before baking)
